GIN EVA La Mallorquina

Gin Eva is the spirit of the nature of one of the most beautiful islands in the Mediterranean. The citrus fruits of the Sóller valley or the centenary olive trees of the Tramuntana mountain range together with juniper, are the protagonists. The end result is not intended to be complex. On the contrary, simplified recipes are sought that focus on what is important.

All ingredients and botanicals are macerated in neutral alcohol shortly after harvest and then gently distilled in classic copper stills. Since many of the ingredients are seasonal, all ingredients are distilled separately. The final gin is blended later, after the individual distillates have rested for a few months to develop their full aroma. Mallorquina is the traditional olive variety of the island of Mallorca. It is a mutation of the empeldre olive tree that can only be found on the island. The trees are centuries old and grow in the Tramuntana mountains.

TASTING NOTES

COLOR: EVA La Mallorquina GIN comes in a glass with a crystal-clear, clean colour, a transparent hue that reflects the light brilliantly. Its soft, radiant appearance is reminiscent of the clear waters of the Mediterranean, inviting curiosity with its visual purity. As it moves around the glass, small silver reflections emerge, suggesting delicacy in each drop.

NOSE: As you approach the nose, the first impression is a fresh, enveloping aroma, which combines Mediterranean nature in a single breath. The predominance of juniper is noticeable from the start, soft and elegant, but without overshadowing the complex nuances that accompany it. Among them, vibrant notes of citrus stand out, especially bitter orange, which provides a slightly acidic citrus touch. As the inhalation intensifies, delicate floral notes appear, evoking the fresh, clean air of the Mallorcan fields, with a light sigh of lavender and rosemary. There are also subtle hints of exotic spices, which add a layer of depth without losing freshness. The combination of these aromas creates a feeling of lightness and sophistication.

TASTE: On the palate, GIN EVA La Mallorquina unfolds with a soft but enveloping entry, with a touch of freshness that quickly becomes a rounded and well-balanced experience. Juniper is the protagonist, but here it is presented in a more complex way, with a mixture of Mediterranean herbs and a slight note of pine that provides a unique character. In the centre of the palate, the citrus notes are rounded out, with a vibrant presence of lemon and a slight acidity that awakens the senses. The gin does not stay on the surface: the wood and spicy touches, such as cardamom and a light touch of cinnamon, emerge in the aftertaste, leaving a warm and persistent mark. The sensation in the mouth is soft and velvety, without being cloying, with a finesse that invites you to savour it slowly. In the end, the experience culminates with a long and refreshing finish, leaving a light floral fragrance and a pleasant feeling of cleanliness.
