Tasting of Barajas Tequila:
The complexity of tequila Barajas can be divided in three imaginary regions of the glass. The lower,
middle, and upper.
Each region provides its unique notes and flavor from the tequila process. The first note appearing in the upper part of the glass are the notes of our Barrels, followed by the floral notes of the fermentation and ended by a subtle notes of Agave. To reach each region it is necessary to rotate the glass at 45°.
Extra Añejo
This is their most premium tequila that represents the culmination of three years of dedicated aging within Bourbon Barrels, resulting in a truly premium experience.
The first notes that emerge in the nose is a complex balance of slight touch of vanilla sweetness and a toasted caramel. Delving deeper into the exploration, you will uncover a subtle hint of dried fruits, adding smoothness to the palate.
A gentle waft of cinnamon fills the air, serving as a poignant reminder of the fermentation process that relies on native yeast from the region. The initial sip reminds the floral notes of the agave such as pepper, revealing its herbal and earthy character. Our agave comes from Amatitan Valley region.
The last sip reveals the emergence of mineral notes, imparting a distinct character to our tequila. In the end, a harmonious sweetness envelops the entire experience, resembling a gentle embrace for your palate.
