PREPARATION

Hierbas ibicencas are produced following the handwritten recipes of Juan Mari Mayans, creator of the liqueur and founder of the first distillery.
They are produced using artisan methods and employing technological advances to monitor production quality and standards.
The manufacturing process can be divided into distilling, boiling, infusing and macerating.
DISTILLING
Extracting the plant's essence through steam distillation in a copper still for a period of 18 hours. A coil is subsequently used to cool the vapour turning it to liquid.
BOILING
Placing the aromatic herbs in pots of boiling water.
INFUSING
Plants are immersed in water that has been boiled and left for a set period of time.
MACERATING
Process whereby plants are incorporated into hydroalcoholic solutions that vary according to the type of aromatic material. They are then left for periods ranging from 15 days to a month and a half.
TASTING NOTES
COLOR: MARI MAYANS Hierbas Ibicencas presents a bright golden colour with amber reflections that capture the light in a fascinating way. This warm tone, reminiscent of the glow of the Ibizan sun at sunset, is a visual prelude to what is to come. The transparency of the liquor, without being excessively clear, shows a subtle depth that anticipates the complexity of its flavours, inviting you to enter into the sensorial experience with a first glance that is already welcoming.
NOSE: As you bring the glass closer, the nose is enveloped by a rich mix of Mediterranean aromas that recreate the soul of Ibiza. Fresh herbs such as rosemary, thyme and chamomile emerge strongly, offering a green and herbal fragrance that evokes the sea breeze and the mountains of the island. Over time, these notes soften and reveal a subtle fruity touch, with light nuances of citrus that provide freshness. A delicate touch of aniseed integrates harmoniously, adding complexity and roundness to the olfactory profile. All this is complemented by a slightly sweet background, which makes one think of the secrets of Ibizan nature.
TASTE: At first sip, the liquor unfolds on the palate with an enveloping softness, where the smoothness of the alcohol combines perfectly with the warmth of the herbs. The entrance is fresh and herbaceous, but as the liquor travels through the mouth, layers of flavour appear that range from floral and citrus to slightly spicy, with hints of anise and a slight balsamic aftertaste reminiscent of the aromas of the island. The balance between sweetness and bitterness is perfect, not too cloying but just enough to maintain complexity and harmony. The finish is long, with a slight herbal persistence that leaves a refreshing, clean and slightly warm sensation, like a sigh that remains on the palate long after you have drunk it.
