FERMENTATION
Careful selection and classification of the bunches by hand. Gentle destemming of the grapes.
Primary fermentation is carried out in stainless steel vats at a controlled temperature (27-28°C). Maceration with the skins for 13-15 days for the Cabernet Sauvignon and about 14-18 days for the Sangiovese, with successive pumping-over phases and frequent delestage to stimulate aromatic extraction and soften the tannins. Malolactic fermentation takes place in steel tanks and is completed at the end of November.
AGEING
At the end of the malolactic fermentation the wine remains in tank for about 3-4 months and temperatures are kept at around 10°C. Decanting is carried out periodically to remove sediment. The wine is then aged in wood, in French oak barrels previously used for Sassicaia and Guidalberto, for an average period of 6 to 8 months. At the end of the ageing in wood, the wine returns to steel tanks where the temperature is stabilised for about 20 days at around 4-5 ° C for the necessary tartaric stabilisation, before bottling.
TASTING NOTES
COLOR: Le Difese 2021 is a bright ruby red colour of medium intensity, with slight violet flashes on its edge that reflect its youth. Its clarity and liveliness are remarkable, evoking the freshness of the grapes from which it was made. The wine has an attractive and clean appearance, which gives a first impression of quality and precision in its production.
NOSE: As it approaches the glass, the wine reveals a deep and elegant aromatic profile, in which fresh notes of red fruits, such as cherry, raspberry and a hint of blueberry, are combined with the richness of ripe black fruits such as blackberry and plum. This fruity mix is accompanied by a slight herbal background, reminiscent of Mediterranean herbs, such as rosemary and basil. After a short time in contact with the air, subtle spicy notes are perceived, reminiscent of freshly ground black pepper, with a light touch of tobacco and leather that adds complexity and depth to the olfactory experience. The whole is fresh and vibrant, inviting deeper exploration.
TASTE: On the palate, Le Difese 2021 is rounded and balanced, with a well-defined structure but without being excessively tannic. The tannins are fine and soft, providing a silky texture that unfolds elegantly on the palate. The acidity, which remains fresh and lively, provides dynamism and refreshes the mouth, helping the wine feel light and accessible, but with sufficient complexity. The fruity flavor is repeated, with a prominent presence of red and black fruits that are complemented by a touch of spice and a slight mineral sensation. The finish is long and harmonious, leaving a pleasant persistence of ripe fruits and a touch of spice that slowly fades, inviting another sip.
