Shenk’s is a Sour Mash Whiskey made with a substantial amount of rye. Following the success of the 2019 and 2020 releases where some Chinquapin (Quercus muehlenbergii) oak barrels were used during maturation, the 2021 release also includes use of this oak. The wood has been naturally air dried and seasoned for over three years and the Chinquapin oak has been charred at various char levels for the aging of some of the whiskey. This year’s release has resulted in a balanced whiskey with an elegant body and finish.
TASTING NOTES
COLOR: The 2021 Shenk’s Homestead slowly slides its deep, dark amber into the glass, a hue that evokes warmth and maturity. As it swirls, the light gently reflects off its edges, revealing golden glints that suggest its complexity and its age in oak barrels. The bright, inviting color invites you to delve into a sensory experience that promises to be as rich as its appearance.
NOSE: As you bring the glass to your nose, a first wave of ripe, inviting aromas unfolds. The olfactory profile is dominated by toasted vanilla, like a sweet whisper that mixes with dried fruits: raisins and black plums, which provide a fruity yet robust softness. Over time and after a couple of swirls, the whiskey begins to reveal more complex layers. As it is aerated, spicy notes of cinnamon and clove emerge, giving way to a delicate touch of burnt caramel and toasted butter. In the background, a light oak aroma peeks through, providing a well-worked barrel feel that adds character and depth to the profile.
TASTE: On first sip, Shenk’s Homestead 2021 offers a rich, dense, almost creamy texture that envelops the palate with its intensity. The initial taste is marked by a deep sweetness, reminiscent of runny honey and ripe fruits, such as peaches and pears in syrup, which lend a velvety sensation. As it unfolds on the palate, warm spices such as black pepper, nutmeg, and a subtle hint of fresh ginger emerge, providing a vibrant counterpoint to the initial sweetness. The barrel influence comes through with a light smoky oak flavor and a hint of tobacco, adding a layer of complexity and sophistication. The finish is long, persistent and warm, leaving a soft but marked aftertaste of caramel and orange peel, inviting you to continue exploring every corner of its profile.
