After one year's finishing in first-fill bourbon casks, this Yoichi boasts resplendent creaminess and freshness. Its aromas invite us to discover a fruity, springtime and rustic peat. On the palate, although fruit remains abundant, the peat has taken on a more earthy, spicy, mineral and rooty feel. Enthusiasts will notice in particular the stunning notes of curry and walnut that beautifully punctuate the tasting.
TASTING NOTES
COLOR: Old gold.
NOSE: full-bodied, refined. At first, an extremely fruity (Mirabelle plum, pear) and salty peat reveals a juicy, crisp palette of aromas. Allowed to breathe, an intense smoke, candied ginger, wildflower (dandelion, daffodil) and candied citrus fruit (grapefruit, lemon) then emphasize the nose's extreme complexity.
TASTE: neat, resolute. The decidedly salty attack is also liquoricey, spicy (clove) and earthy. The mid-palate offers a heap of candied fruits (banana, walnut, date, lemon), but that's not all... Indeed, acacia honey also gradually coats the taste buds. This sweet and salty register gives the palette of flavours radiant and sunny luminosity.
FINISH: Long, concentrated. Iris concentrate intensifies the heady nature of the palate. It is at this point that malted barley and a rooty, mineral (chalk) peat move to centre stage. Next, notes of tobacco, walnut and curry bring lots of depth to the never-ending retronasal-olfaction. Expressing aromas of essential oils (savory, gentian), the empty glass overflows with freshness.
