Perfectly ripe Kyoto plums are harvested at Akio Tanaka's farm south of Uji at the height of the season and macerated for several months in a specially adapted version of our award-winning gin. When the optimum extraction is reached, the ume plums are removed and haskap berries from Hokkaido are added for a few weeks, then discarded before sweetening our delicious liqueur with sugar also from Japan's northernmost island.  

 Haskap comes from the word ainu which means "the little gift at the end of the branch": they are from the honeysuckle family and are also known as honey berries.

 "BAI" is another word for ume plums and this liqueur is the liquid embodiment of our philosophy of the meeting of East and West.

  The label design has been created from an original woodcut by KIRA KARACHO, successor of a karakami workshop founded in Kyoto in 1624.

TASTING NOTES

COLOUR: Ruby red and silky appearance.

NOSE: Blackcurrant and cherry aromas.

TASTE: Hints of almonds and pineapples.

FINISH: Medium length, very well balanced between sweet and bitter: very drinkable.
