Bomberger’s Declaration Distillery Bourbon honors the legacy of the former distillery known as Bomberger’s in the 1800’s and later as Michter’s in the 20th Century. The 2021 release of Bomberger’s is a robust Kentucky Straight Bourbon at 108 proof with a broad spectrum of distinctively rich characters. For the aging of this release, our maturation team chose special barrels, some of which were made from Chinquapin (Quercus muehlenbergii) oak that has been naturally air dried for over 3 years. While similar barrels were used in the 2019 and 2020 releases of Bomberger’s, this year our production team opted to accentuate rich characters and depth by adjusting the char levels of the Chinquapin oak barrels thereby resulting in a wonderfully distinctive Kentucky straight bourbon.

TASTING NOTES

COLOR: An elegant amber gold shimmers in the glass, displaying a depth that reflects the heritage and patience with which it has been matured. The rich and complex hue gives a first hint of the whisky's richness, revealing its dense texture and robust character that defines it. When swirled, a slight viscosity is perceived that invites one to discover what is to come.

NOSE: The first aromatic whiff unfolds a symphony of enveloping spices, where rye is presented in a vibrant way, accompanied by a warm touch of black pepper and cinnamon. As you go deeper, soft layers of vanilla, honey and a hint of caramel emerge, with a fragrance that refers to soft baked bread. The oak of the barrels is felt with subtle notes of toasted wood and a woody touch that evokes the warmth of a fireplace in winter. There is a slight presence of dried fruits, such as almonds and raisins, which mix with an herbal perfume, providing freshness and complexity. All this comes together in a balance that promises a deep sensory experience.

TASTE: Upon tasting, the first contact on the palate is warm, full-bodied, like an enveloping hug. The intensity of the rye is immediately felt, but is softened by a sweet sensation of toffee and a hint of dried fruit, such as ripe plums. As it unfolds, the flavor becomes more complex, with a remarkable elegance that brings notes of dark chocolate and a touch of smoky oak, thanks to its maturation in carefully selected barrels. The spicy profile of black pepper and cinnamon merges harmoniously, giving rise to a sensation of fullness that lingers in the mouth. The finish is long, clean, and persistent, with a mix of notes of dried fruit and a slight, but captivating, sensation of spiciness that leaves the palate eager for another sip.
