The incredible liquid spends five years aging, first in American whiskey casks, then in Spanish casks that previously contained sherry, bestowing a sublime touch.
TASTING NOTES
COLOR: Its colour is a deep gold, with amber tones that reflect the complexity of the time it has spent maturing in French oak barrels. The intensity of this bright gold conveys the essence of the ageing process, where each flash seems to tell the story of its creation. In the glass, the light is reflected in a mesmerising way, revealing a liquid that evokes luxury and patience, suggesting a maturity that goes far beyond what is expected.
NOSE: As you bring the glass close to your nose, a symphony of complex aromas unfolds. The first layer is dominated by French oak, a soft but enveloping presence, which gives way to notes of toasted vanilla, a clear indication of the perfect interaction between the agave and the barrel. In the background, dried fruits appear: figs, prunes and a slight presence of candied apricot. Alongside these, a subtle sweetness of honey and hints of caramel complement a warm and welcoming atmosphere. Spices, such as cloves and cinnamon, add a light dimension of spiciness that rounds out the aromatic profile, without overpowering it, but rather balancing it in perfect harmony.
TASTE: The first sip is a soft embrace that covers the palate, with a silky texture that seems to melt in the mouth. The entry is rich and complex, revealing layers of deep flavors that slowly unfold. Oak makes itself present again, but now with an almost creamy smoothness, like an aged wood that blends perfectly with the natural sweetness of agave. As the tequila develops in the mouth, notes of ripe fruits such as black plum and fig emerge, accompanied by a hint of dark chocolate, as if they were part of a rich dessert. Walnut and caramel delicately emerge, adding a softness that is complemented by a light, barely perceptible spicy breeze that leaves a feeling of depth. The finish is long and pleasant, with an aftertaste that remains alive on the palate, marked by an incredibly long-lasting smoothness, which leaves a warm and comforting impression.
PAIRING
Braised or smoked meats (brisket, beef rib, or pork belly) with a robust sauce (velouté, meat gravy, or sweet mole).
Semi-mature cheeses (brie and camembert) and cured meats (salami, pamplona sausage, or stuffed loin), accompanied with bread and a compote of figs or red berries.
Bitter or semi-bitter chocolates with citrus jam.
DECANTER
Delicately dressed in three precious metals (platinum, silver, and 24-karat gold), Clase Azul Ultra enlists only the most highly skilled artisans to hand paint these incredible vessels practically blind since the metallic paint that is applied can only be seen after the decanter has been fired.
Our master artisans paint the platinum-feather design from memory and completely freehand. The mastering of this technique can take years to perfect.
