Tasting of Barajas Tequila:
The complexity of tequila Barajas can be divided in three imaginary regions of the glass. The lower,
middle, and upper.
Each region provides its unique notes and flavor from the tequila process. The first note appearing in the upper part of the glass are the notes of our Barrels, followed by the floral notes of the fermentation and ended by a subtle notes of Agave. To reach each region it is necessary to rotate the glass at 45°.
Añejo
When you bring the glass to your nose, the first note that captivates you is the toasted caramel that gradually unfolds, reminding the 18 months aging in American Oak Barrels.
As you delve deeper into the exploration, you discover a subtle hint of citrus, like a pinch of freshly squeezed lemon that adds a delicate acidity.
A touch of cinnamon gently wafts through the air, a reminder of the fermentation using native yeast from the region.
Your first sip reveals even greater complexity. The agave comes to life on your palate, showcasing its herbal and earthy character. Since our agave is planted in the Amatitan Valley region, spices like a pinch of pepper add a touch of warmth that dances on your tongue.
A subtle spiciness caresses your throat in the final sip, adding vibrancy. And just when you think you have explored it all, the mineral notes emerge, reminding you of the earth and tradition behind this iconic beverage.
Finally, a balanced sweetness envelops the entire ensemble, like a gentle embrace on the palate. The tequila fades slowly, leaving a lasting and pleasurable impression.
