GIN EVA La Canoneta

Gin Eva is the spirit of nature on one of the most beautiful islands in the Mediterranean. The citrus fruits of the Sóller valley or the centenary olive trees of the Tramuntana mountain range, together with juniper, are the protagonists. The end result is not intended to be complex. On the contrary, simplified recipes are sought that focus on what is important.

All ingredients and botanicals are macerated in neutral alcohol shortly after harvest and then gently distilled in classic copper stills. Since many of the ingredients are seasonal, all ingredients are distilled separately. The final gin is blended later, after the individual distillates have rested for a few months to develop their full aroma.

The Canoneta, for the creation of this gin, is the most emblematic citrus fruit of the Sóller Valley: the canoneta orange. The result is a full-bodied citrus gin.

COLOR: In the glass, GIN EVA La Canoneta appears with impeccable clarity, almost liquid in its purity. Its crystalline hue with silver sparkles reflects the light with natural elegance. This clean and bright colour is a testament to its artisanal distillation process, promising a smooth and well-balanced experience. When swirled, it leaves a soft crown that, like a signature, reveals its softness and complexity.

NOSE: The first contact with its aroma is enveloping and fresh. The juniper is presented with a moderate intensity, without being overwhelming, showing a soft facet that combines perfectly with a vibrant citrus range, recalling the freshness of Mediterranean lemons and oranges. As it opens up, herbaceous notes emerge reminiscent of a wild garden, with hints of rosemary and lavender, giving way to a subtle layer of white flowers. A spicy, slightly peppery touch completes the olfactory complexity, inviting you to discover more with each inhalation.

TASTE: Upon tasting, the entry is fresh and smooth, like a first sip of air on a clear morning. The juniper is more defined in character, but well integrated with a citrus background that provides vivacity and lightness. The mouthfeel is velvety, with a silky texture that slowly unfolds, revealing flavours of fresh herbs evoking the Mediterranean countryside. As the gin slides across the palate, soft spicy nuances emerge, with hints of white pepper and a slight bitterness that balances the natural sweetness of the citrus.
